#1 — When I send an newsletter in Greek the email text is shown with corrupted characters

I create an newsletter and the email is sent fine. The email characters in the emails are not readable. When I switch the encoding to utf8 in the email they are viewable but that does not happen automatically. How can I tell outlook or any email program what encoding to use.
